Fair State Brewing Coop’s Massive Expansion

If you subscribe to the adage of ‘If you’re not growing, you’re dying”, Fair State Brewing Cooperative has been secretly working out and taking steroids. To an excited gathering at a members-only event on September 6, President, CEO and Chief Holder of Fancy Titles Evan Sallee announced the next phase of expansion for the co-op: a production brewery capable of quintupling beer production in the Midway industrial district.

The numbers shared by Sallee would cause any entrepreneur to drool: keg sales have gone up 82%. Taproom sales are up 50% over last year. Liquor store sales since they started canning? Up 388%. Demand for their award-winning beers is off the charts. With peer, industry, local, state and national recognition as one of the best up-and-coming breweries in the country, they’ve released 78 different beers and seen a membership explosion from 125 to over 900 members.

“The existing brewery on Central Avenue is going to stay exactly the same,” announced Salle to a cheering and relieved membership. “The existing brewhouse will become Niko’s laboratory to continue to craft, experiment and develop new beers.  This facility is going to help us meet demand for our more popular beers.”

The new brew house will come with 120 BBL cold and hot liquor tanks feeding with a 30 barrel mash tun and kettle, processing via whirlpool and centrifuge before filling 4 x 90 barrel fermenters (with space for more) and 4 horizontal lager tanks.  Barrel aging racks, a keg/cooler space bigger than the entire current brewery footprint, a canning line, a full lab, modern offices and trailer-level docks will all reside in the new space.  While the leased space is 40,000 sq ft, parts are planned to be leased out to another business.  “We should not have to move again,” remarked a smiling Matt Hauck, Director of Operations.

“Are you doing the expansion in steps?” I asked Niko Tonks, Head Brewer. “No, we’re going to do it all at once,” he replied. Niko went on to explain that the search for additional brewing space has been going on for over a year. “We looked everywhere, but we kept coming back to this space.”  The building is flanked by two parking lots, which seem to dare the co-op to hold even larger events that the taproom could not.  When asked if they’d be open to sharing space or collaborating with Midway brewing neighbors Lake Monster, Urban Growler, Burning Bros and Bang Brewing, Tonks said anything is possible.

Because Minnesota law does not allow a brewery to have more than 1 taproom, only samples can be offered to tourists and guests at the production brewery.  There will be no on- or off-sale beer here.

Sallee ran through other statistics which caused multiple rounds of applause.  Their charitable “Fair State Cooperates” effort has contributed over 10% of revenues to 12 worthy, non-profit causes in the community chosen by the membership and the board of directors.  Their volunteer group has worked over 3000 hours with these organizations, further helping them to succeed in their mission.

“The goal is to start brewing by 12/31, even if this means we’re boiling some water.” quipped Peter Heidorn, freshly-hired marketing, and communications manager. “There are some advantages to brewing in the same year you buy your equipment. Not sure what’s actually possible or if that’s too ambitious.”

Fair State, Surly highlight Minnesota beer rankings

To what should be no surprise to anyone who enjoys beer around the Twin Cities, a few local breweries were recently acknowledged by RateBeer.com’s annual rankings.

Fair State Brewing Cooperative in Minneapolis was named the 10th best new brewery in the world – quite the feat considering more than 5,400 new operations were eligible. Fair State was also named the best new brewery in Minnesota.

Ratebeer.com highlighted Fair State’s creation of some of the best new craft beer, as well as its cooperative business model, allowing members to get happy hour discounts, collaborate on beer recipes and exclusive access to special releases.

Founded in 2014, Fair State is spearheaded by president and CEO Evan Sallee, head brewer Niko Tonks and director of operations Matt Hauck.

“This award belongs to the entire Fair State community, including our more than 700 member-owners who have a stake in our beer and our business,” Sallee said. “We’re humbled to be recognized among this amazing group of breweries, and we’re especially excited to play a role in putting Minnesota craft beer on the world stage.”

Don’t get Surly – well, yes, please do

Surly Brewing wasn’t shut out.

It was named the best brewery in Minnesota, according to the beer website, as well as offering the best taproom. Surly also was honored with the best Minnesota-made beer – its Abrasive Ale.

Abrasive, as well as Surly Darkness, are also ranked in the top 100 beers in the world.

For styles, Surly was recognized for its SurlyFest (No. 1 in the dark lager category), Todd the Axe Man (No. 6 in the IPA category) and Abrasive (No. 11 in the imperial IPA category)

Surly, as well as Minneapolis Town Hall Brewery, are considered in the top 100 breweries in the world based on RateBeer.com’s users’ rankings.

Fair State Brewing Cooperative AMA – Behind the Scenes

It began with a question: I asked Andrew Schmitt how could we do an interview but not make it seem like just another interview? You know what I mean? I ask a prepared question, they give an answer, we write it down and publish it. Boring. Been done. To death. There’s no sense of… drama… or danger. How could we have a dangerous non-interview?

The answer was: Let everyone else ask any question they want and do it live on the internet.

And that’s exactly what we did by hosting an AMA – an “Ask Me Anything” event – on Reddit: the entertainment, social networking and news website. Users submitted the questions, and Matt Hauck, D. Evan Sallee and Niko Tonks from Fair State Brewing Cooperative answered them. Nobody has the ability to control the questions. Nothing is off the table.

Drama. Danger. We haz it. I tell you straight up: I was nervous. When you’re on Reddit, anything you post has a chance of going internationally viral. There is no ‘only this group sees things’ setting. Wide open. Uncensored. One misplaced statement, and suddenly tens of thousands are repeating it everywhere. Andrew, who agreed to moderate the event, told me not to worry.

There’s not a lot of benefit to repeat every question and answer here, but I will highlight some. A lot of good questions were asked – and yes, some tough ones, too.

In an AMA, sometimes the questions don’t get answered. It is, after all, an “ask” me anything, but there is no promise to answer everything. But as the event wore on, these three were focused and collaborated to answer as many as they could. Even the question about rating Evan’s butt got a reply (oh, NOW you want to check out that link. I see how it is).

As we gathered in the oddly conversation-stilled FSBC taproom in NorthEast Minneapolis, the long periods of silent typing reminded me a lot of hours spent in the computer labs in school. From the back, sounds of crews putting up the large party tent for Saturday’s Co-optoberfest echoed off the brickwork. Piercing the silence most often was the question ‘Did you see this question? Who wants to answer it?’

Things were going quite swimmingly until the first tough question hit. They all seem to see it at the same time, and hands came off keyboards. CraftBrew asked, “Worried about the crime in your area?” The question continued with an account of something that reportedly happened, posted in a closed Facebook group. It wasn’t the first time I’d had heard of this, having chatted with many a patron in many a taproom in the area.

Active and – I’ll say passionate – discussion between the trio commenced, breaking the marathon of silent typing that we’d all been running. After a few minutes of debate, I interrupted them. “You don’t have to answer every question.”

“No, I want to, this is bull****,” said Niko, and began typing his reply. Did you know that typing sounds differently depending on your mood? It does. Happy sounds like “ticka-ticka”. Intense sounds like “TAPPA-TAPPA”. Niko was TAPPING. I glanced over at Andrew, who was working on expanding the chat to the international IAMA channel of Reddit. He seemed non-plussed. So, I worried for both of us.

When Niko was done, Evan and Matt read his response before he hit save. Andrew and I were on the other side of the table, we didn’t see it. “Click” said the mouse: it was saved. I hit refresh to see the reply, trying not to panic.

As the influx of questions slowed, you could hear the business waking up around us. Smartphones chirped, voicemails were checked, the bar phone began ringing. We chatted about Co-optoberfest. A member called, asking how to absentee vote for the election on Saturday. Matt offered Andrew a tasting of the 9… 10? beers they had tapped up.

When we agreed that the one-hour-turned-nearly-two hour event was over, I began packing up the laptops. I think I heaved a sigh of relief – no epic failures, no blatent blunders, no Scott Pelley closing the CBS Evening News with: ‘And our last story comes from a small cooperative brewery in North East Minneapolis…’.

My favorite question? The MacMan asked, “What are your thoughts on a nacho-infused beer? Can we make this happen?”. Any other answer other than “yes, right now, we will do it now” made me sad. You and me, MacMan: simpatico.

My favorite answer? Frozen_Barbie_Head (not their real name… then again, who am I to say) asked. “How do you feel about hipster beers? ie trendy beers?”
