Batten Down the Hatches for Bad Weather

Bad Weather Brewing is a new partnership between long time craft beer fans, and brewing school graduates, Zac Carpenter and Joe Giambruno. Bad Weather Brewing works as an alternating proprietorship within Lucid Brewing’s facility in Minnetonka. Alongside Lucid Brewing and Badger Hill Brewing, Bad Weather will make full use of the Lucid’s 15 BBL brewhouse using 30 BBL fermentors. The alternate proprietorship gives each business control of their own beer from kettle to glass. By joining forces with Lucid Brewing, Zac and Joe were able to design a business model that allows them to start small and expand strategically. The unique cooperation at Lucid Brewing is fostering community and friendship within the small, but rapidly expanding, Minnesota craft scene.

Co-Founders Zac and Joe are both long time homebrewers following the long-term goal of starting a professional brewery. In pursuit of their dreams, Joe graduated from the World Brewing Academy with an Associate in Brewing Technology at Siebel Institute and Zac graduated from the American Brewers Guild and apprenticed at Lucid Brewing. The natural camaraderie they developed as homebrewing buddies soon evolved into a business partnership that picked up Zac’s home brewery name, Bad Weather Brewing (which comes from the fact that he and his dad and brother often brewed in bad weather).

Bad Weather Brewing will feature only one flagship beer. Their brewing plan allows Bad Weather to emphasize seasonal and limited beer releases. Bad Weather’s mission is to bring Minnesota unique beers throughout the year.

The flagship year-round release WINDVANE is a hoppy red ale. The use of American hops gives WINDVANE a swift bitterness with piney, citrus and resinous flavors. If you want something with strong malt shoulders, you have that too. Roast malt layers add complexity and keeps the beer dry to showcase the hops.

The winter seasonal is OMINOUS. This big, intense dark ale comes in at At 7.5% abv. American, English and Belgian malts come together with rich, nutty, roasted flavors. Dark candi sugar brings out hints of dates, raisins, plum and chocolate.

Besides OMINOUS they will be releasing at least three more seasonal offerings in 2013. The guys also plan to throw in some special release beers alongside the regular offerings. Bad Weather Co-Founder Joe Giambruno says, “You can expect at least five releases from us in 2013. They are beers that speak to the season, but don’t follow the pack. Our recipes utilize interesting ingredients that celebrate each season in a way we are proud to present to beer-loving Upper Midwesterners.”

Bad Weather beers will be in kegs and bottles early 2013, with growlers sometime later. Bad Weather plans on utilizing a distributor to deliver their beers to the thirsty masses, but are not quite ready to announce a distribution partner yet, but stay tuned.

Zac and Joe have both completed intensive brewing school programs. Zac Carpenter will take the role of head brewer at Bad Weather Brewing. He is an award-winning home brewer who graduated from the American Brewer’s Guild in July 2012 and worked at Lucid Brewing as part of the program. Part of Zac’s training was working at Hoppy Brewing, a brew pub in Sacramento, California. They have both been working and training on the facilities used at Lucid Brewing. Besides their commercial brewing experience, both have homebrewed for years and have invested countless hours and calories into the growing beer scene here in Minnesota.

Harriet Brewing’s 2nd Anniversary Bash

Harriet Brewing has announced their 2nd Anniversary Bash, Saturday, January 19 at El Nuevo Rodeo, 2709 E. Lake Street in Minneapolis. Harriet Brewing will be taking control of all 12 taps at the club and will be presenting exciting new selections and one-offs in addition to all their favorites, including the return of Elevator Doppelbock. Twin Cities bands Malamanya, Steve Kaul & The Brass Kings, and Postina will be
performing. Additionally, there will be live art by Chuck Hues and Jesse Brodd plus a full tapas bar provided by El Nuevo Rodeo. The celebration will also be taking place across the street at Harriet Brewing’s Tap Room with free music and special brews.

Lucid Brewing Approved for Growler Sales

Lucid Brewing LogoLucid Brewing won approval to sell 64 oz “growlers” and 750ml bottles earlier this week via unanimous vote from the Minnetonka city Council.  The license allows Lucid to sell directly to its consumers at the Lucid Brewey located at 6020 Culligan Way, Minnetonka MN 55345.

The west metro brewers are expected to begin growler sales in early January. The brewery is intent on “flexing its creative muscles” with some new recipes and “brewery-only” special releases. The first two special release beers available in growlers will be “DUCE”; a 7.5% ABV malt-forward imperial red ale, and “CRAIG’S ALE”: a 7.5% ABV chocolate rye, brown ale brewed in honor of a brewery supporter. Brewer Paul Johnson says, “Foto, Dyno, and Air in growlers. Special projects in 750’s. Look for lots of 750’s…”

An Eastside Ghost Becomes a New Local Haunt

At one time, not too long ago, St Paul was a force in the beer brewing scene of the Twin Cities and all of Minnesota. Downtown St Paul had many breweries along the river and the biggest of them all which was just up the street, in the legendary Eastside neighborhood. When you had breweries, you had bars that went along with them called tied houses and one of those old bars has just been reborn.

St Paul Eastsiders, Eric Foster and Bob Parker, thought that most of the action is currently on the other side of town, so why not bring it back to where it began? In 1885 a man by the name of Magnus Lindstrom built a two story building on St Paul’s Eastside and ran a saloon on the main floor while living in the above apartment. A block away was a beer brewery called Hamm’s. After slinging beer and hooch for a  few years, Magnus was eventually made an offer, by Theo Hamm company, that he couldn’t refuse.

The saloon became a Hamm’s tied house and the rest is history…or was it? Prohibition soon came into play and root beer and other non alcoholic drinks were sold until 1933 when prohibition ended and the beer started flowing again. Around 1938 Hamm’s decided to sell the property to a real estate company which continued it as a bar until 1968 when it then became rental units. Later it would fall into disuse, and it stood vacant for 17 years until it bought with the intention of turning it into a coffee shop in 2003. Are you still with me?

Enter modern times: The coffee shop never quite materialized. the Craft Beer and Minnesota beer scene is gaining steam and becoming a newborn version of it’s former self, and 858 Payne Avenue has become Ward 6 Bar and Restaurant. Eric and Bob have recruited Liz Olson of Barbette and Pat’s Tap fame to become the head chef, and with a crew of talented and enthusiastic people it looks to already be a success.Inside Ward 6

I have stopped in twice so far, once for the brunch and again for the dinner menu. Both are pretty good and they offer more choices of food than your typical bar. You can expect to find such things as Pork Ribs, Dijon Pasta, Cicero Stew and even a Charcuterie Plate; then you will have a selection of rotating soups and don’t get me started on deserts!

Of course, being a craft beer bar you will also find a very large selection of brews.  On tap you’ll find 19 different local beers and one out of state import. And if you are wondering, Hamm’s beer is flowing once again It is physically impossible for me refuse a two dollar glass of Hamm’s, so I went for it.Hamm's Bear

A large section of the bar is the original hand carved bar that has been restored to it’s former glory. Also the beer prices are great! Any glass of all beer selections are just three dollars and pints are five dollars. Hamm’s is just two dollars for a glass. Most bars don’t even give you the choice of small glasses for less…  It’s five or more dollars you have to pay before you realize you don’t even like the beer you ordered.

I really like the look and feel of Ward 6. It is like stepping back in time in your own neighborhood. The decor inside and out is amazingly retro. Even the sinks in the bathroom add a touch of class. And if you are lucky enough the Hamm’s bear may make an appearance when you are there.

The eastside is alive with the sound of craft beer!

Eat a Beer: Winter Cranberry Sauce with Candied Citrus

Winter Cranberry SauceSauce:
3 cups whole fresh cranberries
1cup winter warmer ale
1/2 cup brown sugar
1/2 cup white sugar
1/8 tsp of cinnamon
Pinch of allspice, ground coriander, ground ginger.

Candied citrus:
1″ Strips rind of 1/2-whole grapefruit
1″ Strips rind of 1 small lemon
1/4 cup whiskey or bourbon
3 tbsps bourbon or winter ale
3 tbsps brown sugar + more

In small nonstick frypan, combine all citrus ingredients & mix well. Cook down on low heat until caramelized & liquid has dissolved. Add more liquid sparingly of needed. Scrape contents into medium saucepan.

Combine cranberries & sauce ingredients to saucepan with candied citrus.
Cook on medium heat & bring to a boil. Cranberries will pop open & turn translucent. Simmer for about 15 minutes or more.

You can use a food mill or sieve to create a smooth sauce; crush with a spoon for chunky sauce; or leave whole.

Pour sauce into serving dish and set aside to cool. Sauce will set up while cooling. Chill and serve.

I used Southern Tier Old Man Winter Warmer Ale.
Summit Winter Ale or Indeed Stir Crazy would work nice also.
I used Kentucky Bourbon Ale & Jack Daniels Honey for the candied citrus.
